Am I right?! Number Two: it are picky eater friendly because, hey, you don’t like peppers? Don’t put them in the pot. Or you have a child that has sensitive tastebuds? (I have no experience with that. None at all.:) Put less spice in it! Number Three: You can always change it up! The sausage in this meal is organic and healthy. To make things super easy, it’s already cooked. Yahoo! It’s so simple and so so tasty. Prep the rest of the ingredients while the sausage is browning and you’ve got yourself a seriously fast meal. The seasoning on the chili consists of two things: frontera taco skillet sauce and ancho chili powder. So easy and trust me when I say, this will knock your socks off!
How to make this Easy Healthy Chili Recipe!
You can also use an Instant Pot to make this easy chili, this recipe takes about 20 minutes on a low simmer in a big pot. First, I browned my meat of choice (today we used Aidells chicken sausage. This is my FAVORITE. We buy them at Costco in a huge pack and use them for everything. Next, I added the onion and peppers to the meat. Cook for 2-3 minutes and set aside. Using the same skillet add the cubed potatoes and cook until mostly soft.
I drained all the canned beans and added to my big pot (you can out them in an instant pot or crockpot/slow cooker). Keep the liquid from the beans in separate bowl to add more liquid later. After that, I add the taco skillet sauce, spices and tomatoes. Next, add the meat, onions and peppers to the pot. Bring the pot to a boil and simmer for 15-20 minutes. Add the potatoes to your pot half way through simmering, so at about 7 minutes. Make sure you stir frequently.
Now comes the fun part: toppings. I say, go crazy! We like to add shredded cheese, sour cream, tortilla chips and some sliced avocados .. really anything! I’d love to hear your topping suggestions in the comments below. You’re family will love this easy delicious chili recipe that us healthy!

Ingredients
- Any meat of choice
- 2 red peppers
- 2 yellow peppers
- 1 small white onion
- 1 can dark red kidney beans
- 1 can black beans
- 1 can pinto beans
- 1 can light red kidney beans
- 1 can fire roasted diced tomatoes
- 1 can fire roasted diced tomatoes with garlic
- 7 small yellow potaoes
- 1 8oz Frontera ground beef taco skillet sauce
- 1 tsp chili powder
- 1 tbsp ancho chili powder
- 2 tsp garlic salt
Instructions
- Cut your meat of choice (we used 4 Aidelle chicken sausages) into small 1 inch cubes.
- Heat your skillet on medium heat, spray your skillet with cooking spray.
- Add your meat and cook until the outside is brown.
- Add the onion and peppers to the meat and cook together for 2-3 minutes. When the onions are translusent and the peppers are softed, set a side.
- Using the same skillet as your meat, onions and pepers, add your cubbed potatoes. Cook on medium until browned. About 3-4 minutes.
- Drain your canned beans setting the liquid aside in a medium bowl.
- Pour all of your drained beans, Frontera taco sauce, spices, canned tomatoes into your big pot.
- Add your meat to your pot.
- On low to medium heat bring your large pot to a simmer for 8 minutes.
- Add browned potatoes to your chili and simmer for 12 minutes.
