Easy Strawberry Shortcake Dessert
When I was a little girl, my mom always made this strawberry dessert for any spring time holiday. It was passed down from my Grandma so it’s always had a special place in our home. I loved it so much that I would sneak down into the kitchen, open the fridge and steal bites out of the bowl. It’s as if it was calling me from the fridge!
There is just something about sugary strawberries, whipping cream and angel food cake that make my heart leap for joy. I literally feel like angel food cake is made from real angels, how can it not be? It’s perfect. A soft, fluffy, moist cake that is straight from heaven. Put it all together and it’s all pure magic. I would help my mom make this recipe and she would have to tell me to stop eating all the cake so it could go into the bowl.
As a kid, I would help my mom mix the whipping cream together and it was a total blast watching the liquid mixture turn into a fluffy masterpiece. Your kids will love it too. Then the Jello! What kid doesn’t love to make and eat Jello?!
How to make this Easy Strawberry Shortcake Dessert
First, we make the Jello. Yahoo for Jello! Stir 1 cup of boiling water to the dry Jello. Keep stirring until the powder is dissolved. Put the bowl in the fridge to cool until the Jello is the consistency of egg whites. To speed up solidifying time, add some ice cubes to the mixture. It will take about 2 hours for the Jello to set. After it’s ready, it can all be mixed together, so plan accordingly.
While you’re waiting for the Jello, cut 1 pint of strawberries into medium sized slices. Place them into a bowl and add some sugar. You can add as much or as little as you want. The strawberries should be covered and will soon start to soften.
Next, pour the 1 pint of whipping cream into a mixing bowl. Using a hand mixer, beat until the whipping cream becomes light and fluffy. There is something so cool about watching this happen. It’s like a little science experiment for your kids.
When the whipping cream is pretty stiff (you can test this out by scooping a fork into the cream); if it peaks, then it’s perfect!
When your Jello is ready, fold 1 cup of strawberry yogurt (not the fruit on the bottom kind) to your Jello bowl. It should be mixed together pretty well and look fairly frothy.
Next, add in the beautiful strawberries into the cream. Strawberries and sugar make my heart leap for joy!!
After you have your mixtures ready, it’s time to add the cake! Break up the angel food cake into medium pieces. I just do this with my hands.
Slowly add the cake to the strawberry mixture. It will break up a little bit; but try to be gentle so those pieces of cake stay together.
Add some cut strawberries on top just to make it pretty and that’s it! Super easy, super fast and super yummy!
Serve immediately. This dessert will keep in the fridge for about 24 hours but it probably won’t last that long! A tip to keep the strawberries from browning, add a little bit of lemon juice. Lemon prevents browning and keeps the strawberries crispy.
How to make a Healthy Dessert?
To make this recipe more healthy, replace the heavy whipping cream with fat free of sugar free Cool Whip. Replace the sugar with Stevia. Use sugar-free strawberry Jello. Substitute the yogurt for strawberry greek yogurt.
