Cowboy Caviar, Cowboy Salsa, Avocado Salsa: whatever you want to call it – it’s the best thing to make with all those garden fresh veggies you love!!! It’s the same base recipe as my favorite fresh salsa recipe, but with some special additions that adds good fats and some awesome protein! In fact, I eat just this for lunch when I need a good vegetarian meal! This is literally the best cowboy salsa recipe there is!

I love to grab any mixture of tomatoes from my garden, pull out an onion, grab a few peppers (Anaheim and Jalapeño), add avocado, black beans and corn and throw this together for an awesome snack or to make my lunch or dinner just that much better.

The Best Cowboy Salsa Recipe
Ingredients:
– 8 Large Tomatoes (I count a handful of smaller ones as one large)
– 1/4 – 1/2 Medium Onion (I like sweet yellow, but choose the flavor you like. White will make it a little spicier, Red will be a little sweeter.)
– 1 Can Diced Green Chili’s
– 1 Jalapeño (remove seeds if you don’t like spicy!)
– 4 Diced Avocados
– 1 Can White Shoepeg Corn – drained
– 1 Can Black Beans – drained and rinsed
– Rice Vinegar – to taste
– Garlic Salt – to taste
– Lime – to taste
– Cilantro (optional)
Directions:
– Dice everything up, throw it together and taste it! If you like more of anything, add it. It’s literally that easy!!!

We love to whip up some nachos on a lazy Sunday and eat a HUGE bowl of this! But it also goes awesome with taco salad, pork burritos, quesadillas… I mean the possibilities are endless! I so hope you enjoy!!!
